What I ate 🌮

Kale + beet juice:
1 bunch of kale
1 beet
3 pears
1 apple
1 small-medium sized chunk of ginger

Buddha bowl:
Oven baked potatoes
Steamed broccoli
Romaine lettuce
Avocado
Sauerkraut

Bbq chickpeas—
*preheat oven to 400 degrees f.
*rinse and drain chickpeas
*add to pan lined with parchment paper
*add about 2 tbsps of bbq sauce and mix well
*cook for 15-20 mins tossing every now and then. Add more bbq sauce if needed.

Raw vegan tacos:
1 cup walnuts
1 cup of cremini button mushrooms
2 cloves of garlic
1 tsp coconut aminos (sub soy sauce)
1 tsp liquid aminos (sub soy sauce)
2 tsp nutritional yeast
1/2 tsp smoked paprika
1/2 tsp garlic powder
1 tsp chili powder
1/2 tsp onion powder

You could add all of this to a food processor if you have one. If not, do this:

*pulse walnuts in blender (or pedestal and mortar if you don't own a blender)
*finely chop mushrooms and garlic
*add walnuts, mushrooms, and garlic to a bowl and mix well
*add add spices, liquid and coconut aminos to mixture and mix well.
