I love making what I ate today videos to show that it's easy to make healthy, filling meals on a plant based diet. I like to cook the same foods I did before going vegan, like pancakes and mashed potato bowls, but as you will see in this video, I just find little ways to swap out the animal products and add in fruits and veggies. It's not about deprivation or reinventing the wheel, it's just a few small changes that really add up! The result is filling, healthy meals that taste good and they're easy to make. I hope you enjoy seeing what I eat in a day and this Target haul too!
