Makes 2 servings
Ingredients:
Garlic powder (approx. 1 tsp)
Salt (start with 1 tbsp)
4 green (not ripe) plantains
2 purple onions (3 was probably an exaggeration, but I used my leftovers)
1/3 cup Earth Balance butter (or any other plant based butter)
Olive oil
White vinegar
Instructions:
Mangú
1. Wash, peel, and cut plantains into quarters, then add to pot.
2. Add salt and add a generous amount of water.
3. Cook on high heat. (Approximately 25-30 min)
4. Once the salt has dissolved, taste for saltiness. It should taste good to your palate, but not salty.
5. Once the plantains are fully tender, they’re cooked.
6. Strain plantains and add to a large bowl.
7. Add butter, garlic powder, and mash.
8. Add some iced water (approx. 1-1.5 cups) and mix to check if ideal creamy consistency has been reached.
9. Taste and add salt if needed.
Onions
1. Peel and slice onions.
2. Add a generous amount of vinegar and let sit for a few minutes. You can add a bit of salt if you’d like, but I prefer not to.
3. After the onions have changed color (about 10 min), strain, and then cook them until translucent; medium/low is best. You can add a bit of the pink vinegar leftover if desired. I add approximately half.
