I honestly think I have only had one Big Mac my whole life. It was after my Happy Meal days but before I started eating Chicken Sandwiches which was pretty soon. FYI: there were no Mighty Kids Meals in my day, lol. It was known by my family that I had a small apetite and they said that I wouldn't be able to finish it. I took it as a challenge and finish the whole thing I did. I don't even think I had eaten half of a standard size burger up to this point in my life, but that was the birth of my glutinous abilities. Today we will use our enormous appetites for a more plant based pursuit, the vegan Big Mac. McDonalds Big Mac has a total of 550 calories, mine . . . 365 calories total.
Ingredients:
2 Portobello Mushroom Caps
1/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon liquid smoke
Sesame Seed Bun 1.5 (1 top/2 bottoms)
1 tablespoon vegan 1000 Island Dressing
1/2 cup shredded lettuce
1 slice of vegan American Cheese
2 slices of Dill Pickle
1 tablespoons Onions
Description:
Preheat oven to 450 degrees F.
Place Portobello mushrooms in the baking dish bottom side up.
Salt, pepper, and liquid smoke throughout the mushroom cavities.
Cover baking pan with aluminum foil and bake or grill for 15 minutes.
Assemble your vegan burger in this order: Bottom bun, 1/2 tablespoon salad dressing, 1/4 cup shredded lettuce, American cheese slice (if you wish), Portobello mushroom cap, 1/2 tablespoon diced onions, the other bun bottom, 1/2 tablespoon salad dressing, 1/4 cup shredded lettuce, 2 pickles, Portabella mushroom cap, 1/2 tablespoon diced onions, and finally top bun.
Enjoy.
Helpful tip: To prevent sogginess, toast the buns.
