Jackie's Recipe:
Jackie thinly sliced the sunchokes and fried them until golden, then warmed a savory sauce of yogurt, flour and spices until it thickened. She then coated the Chick’n Scallopini in a mixture of almond meal, flour and salt, pan frying the pieces until light brown and keeping them warm in the oven. Lastly, she tossed arugula in a vinaigrette of grapefruit juice, yogurt, apple cider vinegar and agave, plus seasoning; sprinkled grapefruit with sugar and brûléed it in a pan and garnished the salad with grapefruit pieces, thinly sliced celery and shallots, plus sprinkles of cayenne and sea salt.
Emira's Dish:
I sautéed the Scallopini's with spinach and curried chickpeas,
Added two cups of kite hill yogurt in a blender, along with some curry powder, cayenne, squeezed grapefruit, fried onions with sunchokes soy sauce and agave syrup. Yogurts go great with curry!
