How to Make a Vegan Pizookie
I used a store bought cookie mix from Trader Joes and just subbed vegan butter and used 1/4 cup of unsweetened applesauce for the eggs.
You can do this with any cookie mix that doesn't contain dairy or eggs, just sub a vegan butter or vegetable oil for the amount called for on the box. And use applesauce or 1 flax egg per recommended egg.
Applesauce works well for blondies since it's more of a batter than a dough (like brownies) And a flax egg works better if you want a sturdier cookie shape :)
Flax Egg Recipe:
Mix 1 tbsp of ground flax seeds with two tbsp of water in a small bowl. Let it sit for 15 minutes to thicken then use it like you would use an egg in the recipe.
Pizookie Tip: under bake the cookie a little so the center is gooey! Top with ice cream and serve warm!
