Lemony Energy Balls
INGREDIENTS
1 c. shredded coconut
1 c. almond flour
1/2 c. oats
2 lemons, juiced
Zest of 1 lemon
1 cup of dates (soaked if not juicy!)
½ tsp vanilla extract
1 tbsp hemp seeds
2 tbsp ground flax seeds

METHOD
Combine all ingredients in a food processor.
Roll dough into balls and refrigerate.

Smoky White Bean Burgers
INGREDIENTS
2 cans white beans
2 Garlic
½ Onion chopped
1 tbsp Thyme
1 tbsp flour
2 tbsp Flax
Kale
1 ts Smoked paprika
1tbsp chipotle powder
2 tbsp soy sauce

METHOD
Mash beans.
Combine all ingredients in a bowl.
Freeze for future patty making.

One-Pot Red Curry
1 tbsp minced ginger
1 onion, chopped
2 garlic cloves, minced or pressed
2 carrots, chopped
1-2 lbs golden potatoes, chopped
½ bell pepper, sliced
1 handful snow peas
1 small jar of curry paste
2 cans coconut milk
2 c. veggie broth
3 tbsp coconut aminos

METHOD
In a big pot, sauté ginger, onion, and garlic in a little water until soft and fragrant.
Add all veggies except snow peas. Cook until hot.
Add curry paste. Stir to combine.
Add coconut milk, veggie broth, and coconut aminos. Stir to combine. Bring to a boil, then simmer for 20 minutes.
Add snow peas at the end.
Freeze or refrigerate and serve with rice.
