BEET HUMMUS & BAKED CHIPS | OIL FREE, GLUTEN FREE :: VITAMIN KATIE
Who needs a cheese platter appetizer 🤢 when you can make a rainbow 🌈 glow beet board with all your favorite veggies, colors, crunches, and contribution to the planet, animals, and your cholesterol levels ✨ Excited for you to try this one! Don't forget to add salt and pepper to taste 😋 I was just making this for me so serves 1-2, feel free to double or triple to make for a partayy
BAKED CHIPS
I used Trader Hoe's gluten free quinoa flour tortillas and those were SO MUCH BETTER than the corn tortillas!! The quinoa flour tortillas turned out so light and perfectly crispy. Highly recommend flour tortillas over the corn. If you are using corn, be sure you get organic and try to find ones that are wicked thin! And of course, read that ingredients label: try for just 1-3 simple ingredients.
1. Preheat oven to 350*F & line baking sheets with parchment (you actually may not need the parchment at all.. nothing to stick or make a mess..)
2. Slice tortillas into triangles and spread evenly (no overlap) on baking sheets
3. Bake for 18-20 minutes
4. Be so proud of yourself for making your own chips that are way healthier than the ones you get in a bag ! :P
HUMMUS:
Ingredients:
1 can chickpeas, drained *SAVE AQUAFABA* and rinsed
5 Tbsp aquafaba
juice of 1 large lemon
1 Tbsp tahini
1-2 garlic cloves
1 tsp cumin
1/2 small raw beet
salt and pepper to taste
Blend in a food processor S blade or high speed blender until smooth.
